The Shun Narukami 3.5-inch Paring Knife combines the power of carbon steel with the easy upkeep of stainless steel. This beautiful knife has a Blue II carbon steel edge surrounded by two layers of bead-blasted stainless steel. This san mai stainless steel shield, in a Narukami (meaning "thunderbolt" in Japanese) pattern helps prevent corrosion, hide scratches and prevent food from sticking.
The advantages of the carbon core are remarkable. This Blue II carbon steel takes a very fine edge and holds it for hours of food prep. When it does need to be honed or sharpened, it is easily restored to a fine, razor-sharp edge. Carbon steel is the blade material preferred by professional chefs.
Making this Narukami knife even more practical (and beautiful) are its full tang construction and durable micarta handles.
The paring knife is essential for every kitchen. This mini-version of the Chef's knife is very versatile - making tasks such as peeling, coring, trimming, decorating and detail work easy. The small size of this paring knife provides complete control over the blade from heel to tip. The 3.5-inch parer is often used in your hand rather than against a cutting board.
CARING FOR YOUR NARUKAMI KNIFE: To maintain your Narukami knife, clean and dry the blade immediately after use. This will help prevent corrosion and rust. Over time, the carbon steel core and edge will darken and develop a patina. When this happens, the beautiful thunderbolt san mai pattern of the stainless steel over the carbon steel will become even more visible.
