The Shun Kanso 6.5" Boning and Fillet Knife, or Gokujo, is a rigid knife with a razor-sharp edge. The narrow, curved blade slides right in close to the bone for boning tasks. It slices through even the most fibrous tissue, making silver skin no problem and letting you make your own cutlets. The 6.5-inch blade is also well suited for filleting fish, gliding through and quickly removing bones and skin.
The Kanso line of Shun knives was designed based on Zen philosophy, and its name means "simplicity." Shun took only the most essential elements of a knife - high-performance steel, razor-sharp edge, perfect balance and precision cutting control - and created a simple line of knives that provides simply perfect performance. The Tagayasan hard wood handle is contoured for the chef's grip and precision cutting. Tagayasan, known as "iron sword wood," was traditionally used in crafting Samurai sword handles. This wood is naturally dense, durable and beautiful.
