The Shun Classic 7" Flexible Fillet Knife has a long, sharp, straight blade ideal for filleting a fish or boning and trimming out poultry and other meats. Fibrous tissue and pork silverskin are no match for this sharp blade. The blade conforms to the ribs of the fish, removing meat from bones quickly, easily and efficiently.
In the tradition of Japan's ancient sword smiths, each Damascus-clad Shun Classic knife is handcrafted in Seki City, Japan with a 100-step process. The blade is forged with 32 micro-layers of metal on each side of a steel cutting core. There are alternating layers of AUS8A carbon stainless steel, plus one additional layer of nickel on each side of the cutting core. Forged into one single, strong piece of metal, these layers, which provide the beautiful, swirled pattern of the blade, support the core, add stain and corrosion resistance, and help the food slide from the blade. The AUS8A carbon stainless steel provides strength, hardness and wear-resistance with a small amount of flex. The blade of each Shun Classic knife is sharpened to a cutting angle of 16-degrees on each side.
The beautiful Shun Classic handle is an iconic, ergonomic D-shape. It is made of ebony PakkaWood, a resin-impregnated natural hardwood that is durable and moisture resistant and does not harbor bacteria.
Engraving: Up to 12 characters can be custom laser engraved on the blade of the Flexible Fillet Knife.
