This san mai stainless steel shield, in a Narukami (meaning "thunderbolt" in Japanese) pattern helps prevent corrosion, hide scratches and prevent food from sticking.
The advantages of the carbon core are remarkable. This Blue II carbon steel takes a very fine edge and holds it for hours of food prep. When it does need to be honed or sharpened, it is easily restored to a fine, razor-sharp edge. Carbon steel is the blade material preferred by professional chefs.

Over time, the carbon steel core and edge will darken and develop a patina. When this happens, the beautiful thunderbolt san mai pattern of the stainless steel over the carbon steel will become even more visible.
