The Shun Kanso 7" Hollow Edge Santoku Knife brings a newer, simpler design to an all-purpose kitchen knife with a name meaning "three virtues." The "three virtues" of the Santoku Japanese blade shape are twofold: referring to the three types of food the Santoku is designed to prepare - vegetables, poultry and fish - and the three types of cuts at which it excels - slicing, dicing and chopping. The hollow-ground indentations (also known as granton edge) on the blade reduce the friction between the blade and the food, allowing the blade to glide through even usually-sticky potatoes, and also creating pockets of air so the knife releases the sliced food from the blade more easily.
The Kanso line of Shun knives was designed based on Zen philosophy, and its name means "simplicity." Shun took only the most essential elements of a knife - high-performance steel, razor-sharp edge, perfect balance and precision cutting control - and created a simple line of knives that provides simply perfect performance. The Tagayasan hard wood handle is contoured for the chef's grip and precision cutting. Tagayasan, known as "iron sword wood," was traditionally used in crafting Samurai sword handles. This wood is naturally dense, durable and beautiful.
